Key Responsibilities
* Spearhead steak operations, driving precision and quality in preparation, butchery, portioning, and cooking to exact doneness.
* Architect wood-fired and charcoal grilling techniques, ensuring consistent execution and elevating the dining experience.
* Champion authentic Italian flavors, overseeing the preparation of pasta, risotto, and meat mains to maintain exceptional quality and consistency.
* Develop and lead the kitchen team, providing expert training on techniques, timing, and plating standards to ensure seamless service.
* Orchestrate high-volume kitchen operations, prioritizing food safety, consistency, and efficiency during peak periods.
* Craft signature Italian steak dishes, such as Bistecca alla Fiorentina and Tagliata di Manzo, with precision and flair.
* Design and develop complementary steak accompaniments, including herb oils, balsamic reductions, and traditional Italian sauces.
* Streamline steak preparation workflows, managing receiving, trimming, dry-aging, and portioning with precision.
* Oversee the preparation of fresh pasta, risotto, antipasti, and other Italian specialties, ensuring regional authenticity and consistency.
* Collaborate with the Executive Chef to develop seasonal menus and meat-focused specials that showcase Italian cuisine.
* Educate the team on doneness control, resting, and carving techniques, ensuring exceptional presentation and quality.
* Drive service flow efficiency, expertly managing firing, plating, and expediting orders to deliver outstanding customer experiences.
* Support menu engineering, costing, and premium ingredient sourcing to maintain high culinary standards.
* Perform and supervise precision butchery of premium cuts, maintaining accurate logs and inventory rotation.
* Source and manage high-quality Italian specialty ingredients, including DOP products, olive oil, and cured meats.
* Enforce rigorous HACCP standards for meat handling and storage, ensuring a safe and clean kitchen environment.
* Conduct daily sanitation checks, maintaining the cleanliness of grills, hoods, prep areas, and cold storage to uphold exceptional kitchen standards.
